Why when you make lollypops do you have to boil the ingredients to 300 degrees for it to harden?

The fundamental idea here is to create a supersaturated solution of sugar in water. Then when you cool it, an amorphous crystalline mass forms - your lollypops. Check this recipe page for more information.
